First, I don't have a lot of free time.  But I am an EE and do a lot of retro computing projects.  I could happily lend some advice with more detail.

I built a prototype of what I called RGBI2USB.  It's a MDA/CGA/EGA to USB capture dongle.  I showed it at VCF-MW a year and a half ago.  Version 1 is in a patch work of eval boards and custom extensions.  Even have a Windows/Mac/Linux app to show the virtual screen.  Plans for version 2 included audio capture and a virtual K/M function to send clicks/types in the capture window on the host machine back to the retro computer.   Trixter has been pushing me hard to finish it.  But the demand has been addressed to some degree by the MCE2VGA.   Not sure if it would meet your needs.  But I'll hopefully get back to it soon.
